If you are anything like us, when temperatures rise we look to easy no-cook recipes that aid in our quest to avoid using our stoves. For her final post as Food & Drink Guest Editor, Sarah Adler, leaves us with a easy, delicious salad and refreshing summer cocktail just in time for your weekend entertaining - no (additional) heat required! Sunflower Avocado Salad
INGREDIENTS (Serves 3-4)
1 yellow summer squash, chopped
1 zucchini, chopped
1 avocado, cubed
1 red bell pepper, chopped
2 radishes, chopped
1 carrot, chopped
1 green onion, finely chopped
1 handful mint, finely chopped
1 handful parsley, finely chopped
1 lemon, juiced, finely chopped
¼ cup roasted sunflower seeds
sea salt and pepper to taste
Combine all ingredients (except sunflower seeds) to a large bowl and mix well to combine.
Store in a sealed container with a bit of lemon juice on top. Sprinkle sunflower seeds over the top when ready to serve.
Notes: When you first make this salad, hold off on the avocado until you are ready to eat. The next day, add in 1 can of white beans, rinsed and drained. Sprinkle sunflower seeds over each time you serve.
INGREDIENTS (Serves 2)
2 cups cubed watermelon, juiced (or blended first, then strained - yielding approximately 1 cup juice)
1 lime, juiced
1 cup club soda
2 shots gin, vodka, tequila or prosecco (optional)
Combine all ingredients in a large pitcher to mix, or split ingredients equally and pour over 2 glasses of ice.
Garnish with fresh mint or extra lime wedges.
