On The Menu: Sunflower Avocado Salad + Watermelon Lime Cooler

For her last post of the month Sarah Adler shares two simple and refreshing recipes sure to keep you cool this weekend!

Can we all agree there are few things less appealing than sweating over a home cooked meal? If you are anything like us, when temperatures rise we look to easy no-cook recipes that aid in our quest to avoid using our stoves. For her final post as Food & Drink Guest Editor, Sarah Adler, leaves us with a easy, delicious salad and refreshing summer cocktail just in time for your weekend entertaining - no (additional) heat required! Sunflower Avocado Salad

INGREDIENTS (Serves 3-4)
1 yellow summer squash, chopped
1 zucchini, chopped
1 avocado, cubed
1 red bell pepper, chopped
2 radishes, chopped
1 carrot, chopped
1 green onion, finely chopped
1 handful mint, finely chopped
1 handful parsley, finely chopped
1 lemon, juiced, finely chopped
¼ cup roasted sunflower seeds
sea salt and pepper to taste

Combine all ingredients (except sunflower seeds) to a large bowl and mix well to combine.
Store in a sealed container with a bit of lemon juice on top. Sprinkle sunflower seeds over the top when ready to serve.

Notes: When you first make this salad, hold off on the avocado until you are ready to eat. The next day, add in 1 can of white beans, rinsed and drained. Sprinkle sunflower seeds over each time you serve.

Watermelon-Lime Cooler

2 cups cubed watermelon, juiced (or blended first, then strained - yielding approximately 1 cup juice)
1 lime, juiced
1 cup club soda
2 shots gin, vodka, tequila or prosecco (optional)

Combine all ingredients in a large pitcher to mix, or split ingredients equally and pour over 2 glasses of ice.
Garnish with fresh mint or extra lime wedges.
