When summer rolls around we find ourselves gravitating towards refreshing cocktails that are neither too sour nor too sweet. So when our friends at Purely Elizabeth sent over a recipe for their unique take on the mojito, we knew we had to give it a try (and taste)! Don't let the ingredients or process fool you, this seemingly complicated beverage is easy to assemble, and vegan + gluten free to boot (we will take all the health points we can get). Roasted Plum Coconut Mojito
2 plums, halved, pits removed
1 tsp cinnamon
½ cup mint
4 oz lime juice
4 oz St. Germain
16 oz coconut water (Harmless Harvest is our favorite)
8 oz rum
1. Preheat oven to 400˚.
2. On a parchment lined baking sheet, place plums, sprinkle with cinnamon and roast for 20 minutes
3. In a cocktail shaker, muddle plums, mint, lime juice and St. Germain
4. Add in ice, coconut water and rum
5. Shake and serve
