On The Menu: Classic Chicken and Vegetable Soup

It does not get more quintessentially cozy than chicken soup! With the onslaught of winter weather (and accompanying winter colds), we tapped food blogger, author and nutritional guru Sarah Adler to share her favorite simple, healthy and healing soup recipe!

Isn’t it weird that when we are sick, we eat soup from a can that has little to no pronounceable ingredients and then expect our body to heal faster? The logic behind it surpasses me every time. This real food version from my soon-to-be-released Simply Real Health Cookbook, (complete with a healthy twist of shredded cabbage instead of noodles) gives you a double dose of veggies, protein and healing chicken broth - so you can be back to your normal, energized and awesome self in no time!

Classic Chicken and Vegetable Soup (Serves 6)

2 cups organic shredded chicken
½ head green cabbage, chopped or shredded
3 carrots, chopped
3 stalks celery, chopped
½ onion, chopped
2-4 cups organic chicken broth
1 teaspoon dried sage
1 teaspoon dried parsley
½ teaspoon sea salt
1 teaspoon pepper

In a soup pot over medium heat, add a bit of olive oil and the onion, and sauté for 2-3 minutes.
Add carrots, celery, cabbage, shredded chicken, and spices and let cook for a few more minutes.
Add the chicken broth, reduce the heat to a simmer, and let cook for 5-10 minutes - serve and enjoy!

*Notes: You can easily make your own chicken, or to speed up the prep time, use a pre-cooked rotisserie chicken. Add brown rice or quinoa if you prefer a thicker soup!
