2 tablespoons olive oil
2 garlic cloves
2 large zucchini, cut into triangles
1 cup sweet corn
2 (15 oz) cans of your favorite bean (we used yellow eyed peas!), drained
3 oz. cotija cheese, crumbled
1 avocado, cubed
2 limes, juiced
3 tablespoons fresh parsley, roughly chopped

Olive Oil
Garlic, 2 cloves
Zucchini, 2 large
Sweet Corn, 1 cup
Beans, 2 cans (15 oz)
Cotija Cheese, 3 oz.
Avocado, 1
Limes, 2
Parsley, less than 1oz.
