On the Menu: Vegetable Tacos

Have some random vegetables you need to use up? Add them all to a pot with spices, and you have a delicious, inexpensive weeknight meal.

1 sweet onion, roughly chopped
2 garlic cloves, minced
3 tablespoons olive oil
2 bell peppers, chopped
1 zucchini, cubed
8 oz. mushrooms, chopped
1/3 cup frozen sweet corn
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
3 tablespoons cholula hot sauce
1/4 teaspoon cayenne pepper, dried
16 corn tortillas
3 tablespoons creme fraiche
1 avocado, diced
2 tablespoons fresh cilantro, chopped
2 limes
Sea salt to taste
