On the Menu: Gingerbread Almond Cookies with Maple Icing

It just isn't the holidays without gingerbread, right? This year try our homemade gingerbread cookies that just happen to be gluten-free and delicious.

INGREDIENTS (Makes 3 dozen cookies)
1 1/2 cup almond flour
1/2 cup sorghum flour or oat flour
1/4 tapioca starch
1 teaspoon baking powder
1 teaspoon xanthum gum
1 teaspoon ground ginger
3/4 cup brown sugar
2 teaspoons cinnamon
1/3 cup coconut oil (or butter)
1/4 cup molasses
1 teaspoon vanilla extract
1 tablespoon maple syrup
1 egg
For Icing:
1 cup confectioners sugar
3 tablespoons maple syrup
2 teaspoon coconut milk

Almond flour
Sorghum Flour or Oat Flour
Baking Powder
Xanthum Gum
Ground Ginger
Brown Sugar
Coconut Oil
Vanilla Extract
Maple Syrup
Egg, 1
Confectioners Sugar
Coconut Milk
