A quinoa, fava bean salad with goat cheese and roasted almonds that is not just healthy, but delicious and decadent to boot!

INGREDIENTS (SERVES 4):
1 bunch asparagus, de-stemmed and chopped
1lb. fava beans, removed from pod
2 cups quinoa
3-4 radishes, sliced thin
1/3 cup roasted almonds, crushed
2 oz. goat cheese, crumbled
1 teaspoon sea salt

SHOPPING LIST:
Fava beans, 1 lb.
Asparagus, 1 bunch
Goat cheese, 2-4 oz.
Almonds, 1 lb (whole + roasted)
Quinoa, 6 oz.
Olive oil
Dijon Mustard, whole-grain
Balsamic Vinegar
Lemon
Radishes, 1 bunch
Arugula, about 5 oz.
Garlic

DRESSING:
2 teaspoon dijon mustard
2 teaspoon balsamic vinegar
1 garlic clove, minced
2 teaspoon lemon juice
4 tablespoons olive oil
1/2 teaspoon maldon sea salt
