Our version of chicken soup, this fried rice recipe provides provides the warmth we crave with the sinus-clearing spice we need to beat the common cold.

INGREDIENTS (SERVES 4)

1 cup basmati rice
2 tablespoons olive oil
1 small onion, roughly chopped
3 garlic cloves, minced
1 teaspoon ginger, minced
100 grams beech mushrooms
2 eggs
1/2 lb. shiitake mushroom, shredded
1 zucchini, roughly chopped
2 tablespoon mirin
2 tablespoon brown rice vinegar
1/3 cup tamari
2 tablespoons sesame oil
1 lime, juice
2 tablespoons cilantro, minced
5 shiso leaves, minced
1 teaspoon red pepper flakes
sea salt to taste
